Cheesy Mushroom Pizzette

4 cremini mushrooms, thinly sliced
2 shallots, sliced
2tbs ricotta cheese
2 english muffins, toasted
1 medium tomatoe, sliced
1/2c shredded mozzarella cheese

Cook mushrooms and shallots in a skillet coated with nonstick spray until tender, about 5 minutes. Spread ricotta cheese over each slice of english muffin. Top with tomato slice. Spoon mushroom mix over top and sprinkle with mozzarella cheese. Broil until cheese is bubbly.
